Two Simple Wishes

(These are a Few of) My Favorite Things at Costco

I went to Costco with a list of 10 items I needed to get.  Just some of my standard Costco favorites.  And then this happened:

Yeah, that’s more than 10 items.  I had the (dangerous) luxury of being able to stroll up and down the aisles.  It’s a great way to discover new products.  But it can also lead to spending more time and money than you planned.  This would be an expensive way to shop everyday…but I had not done a big shopping trip at Costco since the holidays.  It was time to see what they had.

In case you don’t have that kind of time or don’t like to wander the aisles, here is a list of some of my old and new Costco favorites that will make your life simple and delicious – and your shopping a little bit easier.

Some of my old standby favorites include:

Kind bars

Kind Bars – I keep these on hand, for those times that I am craving something sweet.  Perfect for those evenings, when the rest of my family is eating ice cream.

Kale salad

Sweet Kale Chopped Salad – This salad is a great thing to have around because it is a simple and delicious way to eat your vegetables.  It is packed with super foods in the form of broccoli, Brussels sprouts, cabbage and kale.  Plus the added cranberries, pumpkin seeds and poppy seed dressing make it a treat. My Girl does not like salad…but she could eat an entire bag of this at once.  And at $4.99 (prices may vary), it’s a deal.

Chicken Quinoa

Organic Chicken, Quinoa & Kale Blend – This is an item that I need to have in my freezer at all times.  It is an easy, go-to lunch.  3 1/2 minutes in the microwave and you have a delicious, healthy lunch that is low in calories and gluten-free.

Almond flour

Blanched Almond Flour – A must for gluten-free baking.  In the past, I used to make my own almond flour; but the texture of the flour is much better than I can get making my own.

Coconut rolls

Crispy Coconut Rolls – These are delicious, gluten-free “cookies”.  They remind me of Pirouline cookies, without the filling.  I love them right out of the bag.  I love them even more dipped in Nutella.

And I found a couple new favorites.

Sweet Potato Crackers

3 Seed Sweet Potato Crackers – I am so glad I found these crackers!  They are officially my favorite gluten-free cracker.  They remind me of corn chips and are delicious by themselves, or with a dip or spread.

Seeds of Change

Brown & Red Rice with Chia and Kale – Seeds of Change Quinoa & Brown Rice were already a family favorite.  Now Costco is carrying a new variety, which I was more than happy to try.  The verdict?  Delicious!  90 seconds in the microwave and you have a perfect side dish for your family.

Of course, there are many, many more things at Costco that I love.  But I’ll save those for another time.
