Gluten-Free Breakfast in 5 Minutes

Breakfast.  It’s the most important meal of the day.  But busy mornings can lead to poor choices or even skipping breakfast completely.  What makes it even more challenging is needing to avoid gluten.  I’m always on the hunt for good gluten-free products.  And Hodgson Mill Buckwheat Creamy Hot Cereal is not just good…it’s great.   In fact, it is my go-to gluten-free breakfast when I want something warm…and quick.  Which is almost every day.

AB&J (Almond Butter & Jelly) Buckwheat Cereal

It’s four simple ingredients.

Buckwheat cereal 1

1/4 cup Hodgson Mill Buckwheat Creamy Hot Cereal

1 1/4 cups almond milk (unsweetened)

1 Tablespoon almond butter

1 Tablespoon fruit spread (any flavor)

gluten-free cereal

Mix the almond milk and buckwheat cereal in a large Pyrex bowl.  Don’t cheat on the size and go smaller.  You and your microwave will thank me.

Microwave on High for 2 minutes.

Stir; microwave on High for another 2 minutes.  Don’t walk away from the microwave during these last two minutes.  The cereal mixture expands while it is cooking and can spill over the top of the bowl.

Remove the bowl from the microwave.  Allow the mixture to sit for 1 minutes.

Stir in the almond butter and fruit spread.  If you like a little crunch, add a few slivered almonds.

The cereal will thicken up with the added ingredients and as it cools.

Find a cozy place to sit and enjoy this delicious gluten-free breakfast.

And there you have it.  A delicious, warm, gluten-free breakfast – in less than 5 minutes.

And the added plus?  Easy clean-up since everything is done in one bowl.
